These are delicious! The longer they sit out, the more flavorful they get. They're soft and chewy -- a big hit in my home! I only had to cook them for 5 minutes because my oven tends to run a bit hot. Definitely watch them because as soon as they start to crack on the top, they're done, unless you like them crisp. I also cooled them on wax paper because I don't have wire racks, and they turned out fine. Also, I had to refrigerate a portion of the batch because I didn't have time to cook all of them at one time. The cookies tasted the same as the ones made at room temperature, but they were puffier. I think I liked the flatter ones better. Next time I'll try the suggestion of substituting some white sugar with brown sugar and see how they turn out.
