avocado - peeled, pitted, and cut into 1/2-inch cubes
Roma tomatoes, cut into 1/2-inch cubes
red onion, cut into 1/2-inch cubes
red wine vinaigrette dressing
I love serving this as a side dish in the summer when the New Jersey tomatoes are in season. I always toss in some fresh basil from my garden and use balsamic vinegar in place of the red wine vinegar. So simple, yet so delicious!
