I loved the flavors and consistency of this dish. I did not have Italian-style diced tomatoes on hand, so I substituted plain diced tomatoes and added one teaspoon each of garlic powder, dried basil and oregano. I cooked the barley in vegetable broth instead of plain water. After adding the barley, beans, tomatoes, spinach and red pepper flakes, I found I had to constantly stir the mixture to keep it from sticking to the bottom of the pot. Next time, I will try adding the liquid from the chopped tomatoes to provide more moisture.
