Yum, yum, yum!!! I've wanted to make this recipe ever since I first saw it in my hard-cover Light & Tasty cookbook (this recipe is from TOH). I finally got around to making this - as part of tonight's Easter dinner/get-together. My fiance and I invited good frineds and my parents over to celebrate Easter (we will be at his parents house tomorrow). Everyone RAVED about this (even my dad!)!!! As part of my dinner decor, I purchased small footed dessert dishes from Crate & Barrel. I used them for this pretty, mildly sweet salad. And, just like the picture shows, I also added leaves (mint) for garnish. Too cute! :-) My friends even "convinced" their picky "I hate all veggies" son to eat this! If you are trying to decide whether or not to give this a try, JUST DO IT! You'll be pleasantly surprised. :) This tastes just like a creamsicle (mmmm...)!!! It's also seasonally appropriate (being that it's made with carrots after all!). One thing to note: If you own a hand-held cheese grater (like the ones they use at Olive Garden, for example), it works like a charm to finely shred those carrots. I have a Pampered Chef one with two different grating drums (one coarse and one fine) and a cup to attach for easy measuring. Of course, you can use a good 'ol box shredder or a food processor too.
