A very light and fluffy pancake that requires fresh buttermilk, but it's the best I've ever made!

A yummy breakfast treat, and very easy to make!! Serve with bacon or sausage, and some fried eggs, wonderful!!! Batter will keep in fridge for a couple of days if you can't make all at once, or you can freeze and make at a later date.

Whole wheat flour and wheat germ add depth to the flavor of these pancakes sweetened with applesauce. This is a recipe passed down from my husband's family in Wales. We added some ingredients to make it a little more healthy for our kids. Add fruit if you like and top with real maple syrup... yummy!

'This recipe yields just a short stack of oat pancakes that's perfect for one or two,' reports Florence Groves of Vancouver, Washington. 'When we used to travel in our motor home, I'd measure out the dry ingredients for individual batches in resealable bags, then just combine with an egg, buttermilk and butter for a quick meal.'

These healthy pancakes with a hint of almond are delicious. They're thick and fluffy and they really stick to your ribs. Serve warm with maple syrup or peach jam. Leftovers are great served cold with a little peach jam spread on them, yum!

Is your family tired of the same old breakfast pancakes? If so, try this recipe! Brown sugar wakes up your taste buds while oats add stick-to-your-ribs texture to carry you through lunchtime. These pancakes are so nicely sweet they don't need syrup...and they're a fun way to get kids to eat oats. --Karen Ann Bland Gove, Kansas
