A refreshing yet hearty dinner salad with bacon, eggs, and vegetables, that takes no time to whip up! You can use any vegetables you have on hand, but the idea is to use 'green ones'. This recipe was passed on from my father-in-law to my husband. They have a Dutch name for it which means 'good stuff', which it is!

This is an uncomplicated but delicious salad. Cook the macaroni, dice up the veggies, mix the two together and stir in mayonnaise. Slip into the fridge to chill for a few hours, and then gobble it up.

Avocados and shrimp are tossed with bacon, cheese, and tomatoes in this super pasta salad. Great as a side dish, but also works as a cool summer entree.

Soy sauce and sugar, added to a bit of vinegar and oil, stir up into a dandy dressing that tops this broccoli/romaine salad. Lightly toasted ramen noodles and chopped walnuts are sprinkled on before serving.

A tasty and filling salad! The fresh mint makes it shine. Can be made ahead and refrigerated. Just add oil and vinegar and mint at the last minute.

This colorful salad is a departure from the usual 7 layer salad. Avocado, pinto beans, tortilla chips and ranch dressing give it a south-of-the-border flair.

Very nice, especially when you use fresh sliced peaches and strawberries, or any other summer fruits that catch your fancy. The dressing is a sweet honey/mayonnaise/sour cream combo and it 's layered in a pretty glass bowl with chopped lettuce, cheese and the fresh berries.
