This is excellent; light, moist, a little crumbly and has such great flavor. I recently learned I have a gluten allergy and most cornbreads that you buy have flour in them. I was thrilled to find this recipe and will make it often.

Honestly, it wasn't very good. We followed the instructions exactly, even taking it out a few minutes early, but it was dry and gritty and didn't taste like much. Don't make it ?

Great as written but the second time I used just a tad of sugar and extra salt, replaced 1/3 of the cornmeal with flour, added finely chopped onion, and a little onion powder, dropped teaspoons full into the deep fryer and had the best HUSHPUPPYS I've ever made. The mayo was just the touch I needed! Thanks

Definitely a keeper! I made this as directed except I did use fat-free mayo. Although the recipe recommends against using low-fat/fat-free mayos, I was very pleased with the way the cornbread tasted. Also, I didn't notice that the cornbread was too sweet as others have said. I thought it was just right taste-wise. I also liked the consistency. It wasn't too crumbly and had more of a dense breadlike quality. My only negative comment is that I had to cook the bread for 8 minutes longer than what is recommended. Although my toothpick came out clean, it was still doughy on the inside so I baked it a little longer.

Yum! Just made this for my family because my husband can't have gluten anymore. It was great. I used Smart Balance mayo because that's what we have. It was very light and fluffy and no more crumbly than an other corn bread I've made.

This is one of the best cornbreads I have had. I have made and love cornbread all my life. This turned out so moist and delicious. I left out the sugar since I don't like sweet cornbread but it is the greatest recipe. Thanks.

Although I've never eaten corn bread before, let alone make it, I loved this. It was a little on the sweet side, but really quick and easy to make. It lasted all of five minutes. It didn't even make it off the kitchen counter!

I liked this cornbread a lot, my only complaints are the sweetness (which can be easily adjusted by using less sugar) and the cooking time...even after 20 more minutes it wasn't cooked through; maybe it's my oven, but I've never had that prob before.

I was looking for a gluten free corn bread recipe when I found this one. I was shocked to see it didn't call for any other flour! It bakes up really light and flavorful. I liked it so much, I had to bake a second one right away because we at it all before dinner was served!

This cornbread was fantastic and easy to make. I did not change a thing and it turned out perfect. My husband and I ate almost the entire pan in one sitting....wonderful with loads of butter! Thanks for a terrific recipe ~ definitely a keeper.
