1 egg
1/4 cup mayonnaise*
1/4 cup buttermilk
1 tablespoon vegetable oil
1 cup yellow cornmeal
1/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt

DIRECTIONS
In a mixing bowl, beat the egg, mayonnaise, buttermilk and oil until smooth. Combine the cornmeal, sugar, baking powder and salt; add to egg mixture and beat just until combined. Grease an ovenproof 6-in. skillet or round baking dish; dust with cornmeal. Add batter. Bake at 425 degrees F for 18-20 minutes or until a toothpick inserted near the center comes out clean.
FOOTNOTE
Reduced-fat or fat-free mayonnaise is not recommended for this recipe.

Excellent cornbread! I actually added a small can (1/2 size) of cream corn, which made it extra moist. I will definitely make this again. Thanks!

This is one of the best cornbreads I have had. I have made and love cornbread all my life. This turned out so moist and delicious. I left out the sugar since I don't like sweet cornbread but it the greatest recipe. Thanks.

I was looking for a gluten free corn bread recipe when I found this one. I was shocked to see it didn't call for any other flour! It bakes up really light and flavorful. I liked it so much, I had to bake a second one right away because we at it all before dinner was served!

Although I've never eaten corn bread before, let alone make it, I loved this. It was a little on the sweet side, but really quick and easy to make. It lasted all of five minutes. It didn't even make it off the kitchen counter!

I liked this cornbread a lot, my only complaints are the sweetness (which can be easily adjusted by using less sugar) and the cooking time...even after 20 more minutes it wasn't cooked through; maybe it's my oven, but I've never had that prob before.

I love this recipe for cornbread! I bake for my family who recently added gluten to our list of allergies. Everyone can have this bread and it tastes wonderful!

This cornbread was fantastic and easy to make. I did not change a thing and it turned out perfect. My husband and I ate almost the entire pan in one sitting....wonderful with loads of butter! Thanks for a terrific recipe ~ definitely a keeper.
