My version of the old classic, using American cheese, mustard and soy sauce. Takes a bit of time, but worth the effort! Serve it on toast. Garnish with crumbled bacon and chopped tomato.

I believe this recipe is the same as Welsh Rarebit, the classic British topping for rye or white bread toast. Melted sharp Cheddar cheese is complimented by Worcestershire sauce and a hint of cayenne pepper.

This delicious rarebit is quite easy to make. Cheddar cheese, bacon, and onion are minced fine, and spread onto bread before being toasted in the oven. It really makes a great appetizer or hors d'oeuvre for a cocktail party. 

Cawl (Traditional Welsh Broth)

This recipe is popular with the local farming community of Cardiganshire. There are regional variations throughout Wales as to what meat is used; some use Pork or Mutton, we use Shin Beef. This soup tastes better after subsequent reheating, so it's probably a good idea to make the cawl a day before consumption.

Condensed tomato soup and beaten egg are combined with ground beef, rice, chopped onion, parsley, and seasonings. The mixture is formed into meatballs, and simmered in a covered skillet with additional soup and Worcestershire sauce for 20 to 30 minutes.
