8 cups cubed seedless watermelon
1/4 cup lime juice
1/4 cup sugar
2 cups diet lemon-lime soda, chilled

DIRECTIONS
In a blender or food processor, cover and process the watermelon, lime juice and sugar in batches until smooth. Pour into a freezer-proof container.
Cover and freeze for 30 minutes or until edges begin to freeze. Stir and return to freezer. Repeat every 20 minutes or until slushy, about 90 minutes. Spoon 3/4 cup into bowls or glasses; add 1/4 cup soda.

Nutritional Analysis: One serving (1 cup) equals 75 calories, 1 g fat (trace saturated fat), 0 cholesterol, 12 mg sodium, 18 g carbohydrate, 1 g fiber, 1 g protein. Diabetic Exchanges: 1 fruit.

Very refreshing! I used slightly less sugar and probably should have let this freeze a bit longer, but I couldn't wait! That was the only down side to this - the waiting time. I have some of the mixture (without soda) freezing in ice cube trays right now for future use. Will try blending those up for "instant gratification" next time!

This is a really good recipe. This is also good as a refreshing summer drink. Just cut the recipe in half, and throw it in the blender with some ice, and blend to perfection!

I too, used Splenda in place of sugar. I mixed this according to directions, and added it to the frozen bowl of an electric ice cream maker which I had frozen over night. It took less than 15 minutes to mix into a smooth "sorbet style" slush, which I served with fresh mint leaves. I will make this again.

I used Splenda, instead of sugar. Very refreshing for such a low-calorie treat! Ms. Montgomery, thank you! I've tried your recipes in Taste of Home QC. You need to write a (cook)book! Very talented.
