Three Pepper Pesto

Red bell peppers, black pepper, and red pepper flakes are blended with basil and Parmesan cheese in this bright and flavorful pesto. Serve this chilled or at room temperature with toasted bread and fresh vegetables as an easy, make-ahead appetizer. 

Sauteed Scallops with Watercress and Corn Salad

This is a lovely light salad. Gently sauteed scallops, still warm from the pan, are presented on a plate with watercress, corn and shredded carrots that have been tossed with a mustard vinaigrette. Makes two elegant salads.

After they baste in the sun all summer long, I cut down my basil plants and make this delightful pesto. This basil pesto has been mellowed with fresh spinach and enhanced by the taste of black olives. I make big batches and freeze in small container for the whole year. It will keep in the fridge for a week. Toss with pasta. Spread on meat or sandwiches. Add a spoonful for favoring to lots of recipes. Enjoy!

This soup is a puree of potatoes, onion and watercress cooked in chicken broth and milk. Serve with a dollop of whipped cream and a sprig of fresh watercress. 

Pesto with Arugula

This pesto is unique due to the arugula, which gives it a peppery bite. I also like the lack of cheese, but add it if you must. Use as a spread or on pasta. My favorite is on baguette slices or on whole wheat crackers. It's addictive!

A fabulously different salad that serves twenty and is beautiful in a bowl. Lots of color and taste sensations. Radicchio, fennel, watercress, and pecans are tossed with a lovely balsamic vinaigrette studded with bits of dried cranberries.

This recipe is something that you can make quickly and easily using a blender. Everything you need is easy to find in your local supermarket. This paste is great for putting on or in meat and pastas, or with cottage cheese in stuffed pasta shells. Once I start making this, the orders from friends and family keep coming in. For best taste, pesto should be heated up in the meal it's being prepared with.
