I have made this a couple of times. I have made some changes out of preference and I don't believe that it greatly affects the outcome, so I still gave this 5 stars. Firstly, I always have an onion but not a green onion. So I finely chop 1/2 a small onion instead. Secondly, I always have A vinegar, not necessarily cider vinegar, and I use what I have instead (usually white wine vinegar). Lastly, I prefer small baby potatoes cooked whole to chopped potatoes. Adding the mixture to the fresh out of the water potatoes cooks the finely chopped potatoes perfectly. This is a lovely accompaniment to BBQ, roast dinners, fish, and great for a potluck addition.

This was a simple, easy, tasty potato salad. I'm usually not one for mayo based salads, but this one had such flavor it'll be a new go-to salad! I listened to other recommendatons, increased the amount of mayo and added sourcream as well. You can truly add and/or switch things around and you'll always come up with a delicious version!

I have been using recipes on this website for about two years now but I have never felt compelled to review until now. This potato salad was excellent! I changed it a little based on previous reviews and now it is a staple in my house. I used 1/4 of light mayo, added 1/4 of reduced fat sour cream and doubled all the rest of the ingredients for the mixture. Also added a little parsley. AMAZING!! Thank you!!

This was a great recipe! I swapped regular onion for the green onion and threw some fresh dill in. So good warm and I'm sure it'll be just as good cold as leftovers.

This recipe along with all the comments gave me a lot of ideas... I'm not sure of the quantities, but I can say what I put in: Mayo, sour cream, Dijon, hot & regular mustard, balsamic vinegar, red pepper, chives, parsley, parmigiana cheese, cherry tomatoes, garlic salt, pepper, celery salt, cajun seasoning and finally, my favorite ingredient to almost anything, bbq grilled pineapple... It was awesome! Good thing I made a big batch!

Best potato salad I have ever eaten!! Very creamy. I did double the ingredients except the potatoes - I just added 2 more potatoes. The second time I made it with Yukon potatoes and it was just as delicious. Def my go to potato salad recipe. Thanks for sharing it!
