5 medium red potatoes
1/4 cup reduced-fat mayonnaise
1 tablespoon grated Parmesan cheese
1 green onion, sliced
2 teaspoons cider vinegar
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
Place potatoes in a large saucepan and cover with warm. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until tender.
In a large bowl, combine the remaining ingredients. Drain potatoes and cut into cubes; add to the mayonnaise mixture and gently toss to coat. Serve immediately.

Nutritional Analysis: One serving (3/4 cup) equals 119 calories, 3 g fat (1 g saturated fat), 3 mg cholesterol, 240 mg sodium, 21 g carbohydrate, 2 g fiber, 3 g protein. Diabetic Exchanges: 1-1/2 starch, 1/2 fat.

So fantastic it was all gone before the BBQ food was even ready & my husband asked me to make more the next day. The only thing I added was Bacon. This is now a family & guest favorite in our house!

I would give this 5 stars but I think for 5 medium spuds, you really need to double the ingredients stated in the recipe. I'm not a fan of potato salad swimming in dressing, but as written, it is way too dry. I also upped the amount of Dijon. Thanks!

This was super yummy. I didn't have any apple cider vinegar so I just used white and it came out really yummy!

Good potato salad. I enjoyed it better warm than cold. After first serving I added a little dill weed to the dish, that enhanced it a little.
