This turned out amazing! Perfect combination with the dates and walnuts. It was the best pumkin pie yet, and i am picky when it comes to these things. Instead of the crust suggested, i ended up making my own pie crust (my recipe).

My mouth is watering right now as I recall how tasty this pie was! I just loved the walnut and date combination, and the pumpkin flavor lightened up the heavy walnuts and dates perfectly. I used oat-flour dates, dates coated in a thin layer of oat flour, which are bettter for baking, I have found (available at your local health food store), and stewed the pumpkin myself. My family has been urging me to try stewing my owm pumpkin, so this year, I gave in. Really, stewing a pumpkin is quite simple, although it is an all day project, and I found the pie to taste much better then the ones I usually make with the simple Libby's pie filling you buy at the grocery store. I coated the walnuts I used for garnish with honey, and cinnamon, but besides that, the recipe was great how it was. Thanks!
