4 cups finely chopped walnuts
1/4 cup sugar
1 tablespoon ground cinnamon
1 cup butter, melted
1 (16 ounce) package frozen phyllo dough, thawed
SYRUP:
1 cup sugar
1/2 cup water
1/4 cup honey
1 teaspoon lemon juice
1 teaspoon vanilla extract

DIRECTIONS
In a bowl, combine the walnuts, sugar and cinnamon; set aside. Grease a 13-in. x 9-in. x 2-in. baking dish with some of the melted butter. Unroll phyllo dough sheets (keep dough covered with plastic wrap while assembling).
Place one sheet of phyllo in baking dish; brush with butter. Top with a second sheet; brush with butter. Fold short ends under to fit the dish. Sprinkle with about 1/4 cup nut mixture. Repeat 18 times, layering two sheets, brushing with butter and sprinkling with nut mixture. Top with remaining dough; brush with butter. Cut into 2-in. diamonds with a sharp knife.
Bake at 350 degrees F for 45-55 minutes or until golden brown. Meanwhile, in a saucepan, combine the syrup ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Pour over warm baklava. Cool on a wire rack.

Editor's Note: This recipe was tested with Athenos phyllo dough. The phyllo sheets measure 14 in. x 9 in.

OMgoodness! Thanks for this recipe. I only had 1/2 of the walnuts, so I used pecans for the other half. I followed the recipe exactly as posted. Loved it.

Beware! So good you'll want to eat the entire thing yourself! Mine didn't turn out looking as pretty b/c I made my own phyllo dough from scratch and it was my first time making Baklava....but turned out tasting fantastic, and guests went back for seconds. Word of advice...if making your own dough, remember paper thin to get that flakey consistency.

I'm not a fan of baklava, but had extra phyllo and guests, so we made this for them and they all loved it and want the recipe.

Yummm This is the first time I've worked with phyllo so I was thrilled about the easy to follow instructions. I love baklava & this recipe is excellent. I realized halfway through making it that I was out of vanilla so I added about a tablespoon of dark brown sugar to the topping & it tastes great. I also forget to cut it before it was baked so the top got a bit flaky once it was cut but it still tastes the same!

I have made a very similar baklava recipe before in the past and it is very good. I do add saffron to the syrup which gives it a nice flavor and aroma. I wanted to try this particular recipe last night. So I got as far as cooking the baklava for 40 min when I took it out to look at the bottom of it, when the Pyrex dish slid out between my potholders and onto the floor. :( Instead of eating this great recipe I ended up cleaning it off the floor. Well at least I am thankful that the Pyrex dish did not shatter and is in good shape to try this recipe again sometime in the future :)

This is the second time that I have worked with Phyllo dough, and it was even easier this time. I loved the reciepe. It only took me about 45 min to put together, and came out better than I expected.
