I used long cooking brown rice and instead of using 2 cups water, I used 1 1/2 cup water and 1/2 cup apple cider vinegar, 1/2 tsp cinnamon and 1 tsp salt then added the sauteed celery,onion, chopped walnuts and apple the last 5 minutes or so of cooking.
Very nice and it went well with the Marinated Tuna Steak also from this site.
