Directions

  1. Combine all dressing ingredients; stir until well blended. Add turkey or chicken, apples, celery and raisins. Toss to coat the salad ingredients. Season with additional salt and pepper, if desired.
  2. Place lettuce leaf on each of 6 serving plates. Top each with mound of salad. Garnish each salad with chopped fresh parsley or chives.
  3. Deli turkey breast may be used in the recipe. Ask the deli to slice the turkey into 3/4- or 1-inch slices, then cube the meat at home before adding to this salad.

This was pretty good. I used sugar free preseves (with splenda) which was a mistake. Made it a little bitter. Also I think 2 tablespoons lemon juice was too much. I didn't use the lemon peel. For dressing I used chives. I think curry powder might be a better choice to jazz it up a bit.

This was good; I served the turkey sliced and separate because of a vegetarian, so I added walnuts to it. The dressing could have used more intense flavor.

excellent salad, not sure on the dressing - used curry powder.
