1 cup Minute® Brown Rice, uncooked
3 medium apples
2 tablespoons lemon juice
1/2 cup chopped celery
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup fat-free mayonnaise
3/4 cup nonfat vanilla yogurt
spring salad greens (optional)
Pretty good. Used dried cherries instead of raisins. Also used 2cups rice. I could have chopped apples into smaller pieces, personal preference.
