This is a great, easy recipe -- but I also changed it up a bit! Bake the hash browns for 10-15 minutes. Instead of ham, I used pork sausage and added onion flakes while browning (I have friends who don't like diced onion texture). I drained the sausage and then topped the hash browns with the sausage and cheese and refrigerated overnight. In the morning, I mixed the eggs, milk, salt, mustard, etc and poured over the other ingredients and baked. Saved lots of time in the morning and always turns out delicious!

I tripled this recipe and took it to a wedding shower brunch. I was planning on having leftovers but when I went to bring my pan home, it was gone! I used cubed frozen hashbrowns instead of the patties and added sausage as well. I also added some onion. Everyone loved it! I will definitely be making this again.

I really liked the flavors of this recipe. The store was out of cubed ham, so I used canadian bacon and the canadian bacon dried out as it cooked. I will definitely use the ham next time. Also, I used 12 eggs in a 13.5 x 9.5 and will definitely use more next time, and less cheese.

Absolutely 5-star recipe just the way it is, or make using the ingredients I had on hand: Flat tater-tot rounds (in place of the hashbrown patties) - prebaked in the oven for 5 minutes while I browned, crumbled & drained 1 pound breakfast sausage (substituted for the ham). I think Eggland's Best does have the best eggs and I splurged and used whole milk to give it extra richness and flavor.

Awesome! I added chilis to the egg mixture and used mexican spiced cheese, it was so good. The only thing I'll do differently next time is double up on the potatos (I used crispy crowns), I'll double stack them, bc I love the texture of hashbrowns and eggs! Yummy!

I make this alot when we have work celebrations, birthday's and etc... Everyone raves about it and can't stop asking for it. I've sent the recipe to all of the girls in the office. It's cheesy and warm and delicous. The only complaint I have is that their is never any left!

My family loves this recipe. I seldom have ham on hand, but always have sausage so we substitute sausage for ham, and add green chiles. I also make it the night before, let it sit inthe fridge, so when I wake up I can just toss it in the oven and let it cook while I'm getting myself and the kids ready.

It is better then the regular breakfast casserole. I used regular uncooked potatoes cooked it for the same amount of time and it came out perfect.

This worked out well for a Mother's Day brunch. I took a suggestion and used "crispy crowns" - (the flat tater tots) in lieu of hash brown patties. I also browned them in the oven first. The extra step of pre-browning did not have any effect that I could tell. I also did not layer the ingredients - I mixed them all together and dumped on top of the tots. Served with sour cream and fresh salsa, which was a huge hit.

My family loved this. Used leftover ham from Easter. The only changes I made was I added chopped green onion and cut the cheese back to about 1.5 cups(plenty) The five of us ate all but one little portion which my husband "called" for breakfast. Will make this again, might try it with kielbasa.

It was a huge hit and has been requested again. My kids (even my very picky one) and hubby flipped over this. We all agreed it needed more cheese, however. It just didn't have a "cheesy" enough flavor.

I thought it was okay, my family liked it. I used crumbled sage sausage instead of ham and browned the hashrowns first. It felt like alot of eggs and meat. It needed some more starch, like more potatoes or served on bread or a tortilla maybe.
