Wake-Up Casserole

"You'll find everything you want for breakfast-potatoes, eggs, cheese and ham-in this satisfying casserole. It can be made the night before and kept in the refrigerator."

INGREDIENTS

  • 8 frozen hash brown patties
  • 4 cups shredded Cheddar cheese
  • 1 pound cubed fully cooked ham
  • 7 eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard

DIRECTIONS

  1. Place hash brown patties in a single layer in a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with cheese and ham.
  2. In a bowl, beat eggs, milk, salt and mustard. Pour over ham.
  3. Cover and bake at 350 degrees for 1 hour. Uncover; bake 15 minutes longer or until edges are golden brown and a knife inserted near the center comes out clean.

This is a great, easy recipe. The first time I made it the hashbrowns were soggy. We like ours a little brown and crispy so this time I baked the hashbrown patties alone in the 9 x 13 dish for 10 minutes before adding the rest of the ingredients. Followed the rest of the recipe as directed. Yum!

This recipe was a good base to something I decided to tweak. I used shredded fresh red potatoes as the base (fried first in butter garlic powder, salt and pepper) used Bob Evans sausage (1 lb roll) sauteed with onions as the second layer and then used 3 cups cheese, 8 eggs, 1 cup milk, 1 can cream of mushroom soup no ground mustard and baked as suggested. YUMMY!

YUM! This has a little bit of everything all in one. I did bake the hash browns for 10 minutes before adding other ingredients as did some other users. Also, I would recommend buying the Ore-ida hash browns, they fit perfect in the cassorole dish (9 X 13) vs store brand. Store brand you will need to break up to make them fit so that you don't have gaps at the bottom without hash browns. I also used about 3 cups of cheese.
