Had this the a.m. after Thanksgiving...RAVE REVIEWS! It's a keeper! I used sausage (family preference) and only 2 cups of cheese. I also baked the hashbrowns about 15 mins..made a big difference. Great, great recipe..your family will love it. Would be great for dinner, too!

This was a great recipe. However I altered it a bit because most of my family are vegetarians. So, instead of 1 lb. of ham, I sauteed some mushrooms and peppers in olive oil (about 1 lb.) and I put that in the recipe instead of the ham. It turned out fantastic, just like a delicious vegetable omelette. Next time I'm going to add onions, but I didn't have any to try this time.

This was very good. Everyone liked this at my house. A good one for leftover ham. I will be trying this with differant potatoes on the bottom also. I only used half the cheese.

I used left over cheeses- american, provolone, swiss, ham instead of bacon, and sprinkled parmesan over the top while cooking. Next time, I'm going to put the hash browns (used frozen shredded not the patties) in the pan and bake it for a while so they get crispy before adding all the other stuff. Thanks!

I made this for a bridal brunch. I turned out perfectly. I added chopped red bell pepper and one more egg. Easy and simple and I have already had requests to make it again! Thank you

Loved this recipe. I used diced potatoes instead of the hashbrowns and homemade sausage instead of the ham. I used less cheese-about 3 cups and it was perfect. Took it to Easter brunch at my sister's house and everyone loved it. Easy and quick recipe with things one has on hand--thanks Iris!

I really liked this recipe. I did trade the hash brown patties for a bag of O'brian potatoes. It's perfect to cut into breakfast squares for me to take into the office.
