Wacky Mac® (prefer Veggie Bows)
green beans, steamed, cut into bite-size pieces
grape tomatoes, halved
reduced-fat feta cheese crumbles
dried crushed oregano
finely chopped fresh chives
2 1/2 tablespoons
reduced-fat vinaigrette dressing
Alright, I've never heard of Wacky Mac, but I had (almost) all of the ingredients on hand, so I thought I'd give it a shot. I made as directed, except I left out the cheese, as I didn't have any on hand. Also, I had to substitute green onions for the chives, and used leftover seashell pasta. Quick and tasty, this was the perfect light dinner. Thanks.
This recipe is a great way to use up some of your garden beans! I used greek vinegarette and it was delicious. I also blanched the green beans to give the salad better texture. Definitley will make this again.
I made this with fresh green beans picked from my garden and took it on a picnic. It went perfectly with Kristi's corn salad and a bottle of pinot grigio.
