Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon baking soda
  • 1 cup packed brown sugar
  • 1 1/2 cups butter
  • 2 eggs
  • 1/2 cup molasses
  • 2 cups rolled oats
  • 1 cup dates, pitted and chopped
  • 1/2 cup white sugar
  • 1/4 cup water
  • 1/2 cup chopped walnuts

Directions

  1. Blend flour, salt, and baking soda. Add brown sugar, margarine, eggs and molasses. Stir until smooth. Blend in oats.
  2. Roll dough out on floured board, about 1/8 inch thick. Cut with 2 1/2 inch round cutter. Place half of the rounds on an ungreased cookie sheet.
  3. To Make Filling: Stir until boiling: 1 cup cut-up pitted dates, 1/2 cup sugar, and 1/4 cup water. Mixture will be thick. Stir in 1/2 cup chopped nuts. Cool before using.
  4. Spread 1 teaspoon filling on center of each cookie. Cut a cross in the middle of the remaining rounds. Place over filling-topped rounds. Press down on the edges to seal. Bake 12-15 minutes at 350 degrees F (175 degrees C).
