I made something very similar to this using cooked vegetables from the garden. So good that way! I like to go easy on the pancake/ cheese part though.

this is my favorite pancake recipe, but its better (in my opinion) if you eliminate the cheese!

This was a really tasty "pancake." It didn't really rise much, but then again I omitted the butter completely. That might be why. To make it healthier, I substituted whole wheat flour, twelve egg whites instead of the whole eggs, and seltzer for the milk. I also used fat free cheddar cheese.
