Mix up this cheesy puff pancake, then peek in the oven to see how high it's risen. You can leave out the cheese and serve it with confectioners' sugar or syrup instead.

'MY AUNT made a mighty breakfast that revolved around 'The Big Pancake'. I always enjoyed watching as she poured the batter into her huge iron skillet, then baked the confection to perfection in the oven. 'The delicious result defied description! It was a sort of combination pancake, waffle and cruller. 'Sprinkled with powdered sugar and garnished with wedges of lemon, this crispy, golden-brown treat--which covered a dinner plate!--was as delightful to the eye as it was to the palate.'

Piping hot and puffy from the oven, this golden pancake made a pretty presentation for a skier's theme breakfast I hosted. Served with my homemade buttermilk syrup, it's an eye-opening treat. That easy syrup tastes great on waffles and French toast, too. -Renae Moncur, Burley, Idaho

An Aeggekage is a traditional Danish oven pancake, usually served as a buffet item or as a dessert for a family holiday meal. It is a light, cake-like dish that is not too sweet and absolutely delicious with fresh seasonal berries and fresh whipped cream! (Think of it as a sweetened Yorkshire pudding).

Apples are baked into a breakfast cake. This is so delicious that you don't need to add any syrup. A great alternative to regular pancakes.
