I am from Mississippi where we like our hush puppies hot, sweet and some folks slice them open and spread butter on them. Catfish fillets, bluegill and crappie dunked in seasoned cornmeal and fried are a staple on Fridays and NOTHING accommodates fried fish like hush puppies and slaw. This is a terrific recipe! Stone-dead simple, sweet and delicious!
I often dice jalapenos and add them to this. If your batter is too thick, add an ounce or two of beer to lighten and add moisture. Add plenty of salt and pepper for a little kick. Use a small spoon because they really puff up a lot when they hit hot (preferably peanut) oil.
I made my jalapeno-incarnation of this recipe for an office fish fry... my cooking partner said "too many puppies..." None remained. Many staffers wanted the recipe.
If you're from the South, you know this is the real deal.
