This was absolutely fantastic! I made it for a family BBQ and it was a huge hit! Since then, I've made it a number of times with various veggies and you just can't go wrong- use whatever you have on hand. The last time I made it, I cut the oil in half. It came out good, but it took longer for the flavor of the herbs to be incorporated in the dressing. If you cut the oil, make sure you marinate at least over night! Also, keep a close eye while you're cooking the veggies. It's best when they are crisp-tender!
