Wow! This was so simple that I was actually surprised by how delicious it was. I doubled the marinade recipe and also brushed it on some frozen chicken breasts I put right on the grill. I also used red bell peppers instead of mushrooms. Quick easy summer meal! I will be making this a lot.

I don't get all the rave reviews. It's ok, but it's a bit more lemony than anything else. I also added peppers and grape tomatoes, but the peppers were not done when all the other veggies were. So I'd have to adjust for that if I make this again.

Super easy and tastes great. I used safflower and canola oil, fresh garlic cloves and doubled the recipe for our large batch of skewers. This also makes a great sauce for veggies cooked in a cast iron skillet on the grill. Those were even better than the skewered veggies.

LOVED this! I am a born-again zucchini/squash eater thanks to this recipe!! I have to admit that I altered it quite a bit based on what I had on hand and not having internet access to view the recipe :0....I used balsamic vinegar in place of the lemon juice and instead of mushrooms I added grape tomatoes, onions and red peppers. I also sauteed my veggies in the marinade on the stove before skewering and grilling as I like my veggies ultra-soft! I think this recipe would work well with almost any grilled entree. Thank you so much for this recipe and making a zucchini/squash believer outta me!!

Good recipe. I made this camping. The colorful veggies looked great and were tasty. This is a great recipe for BBQs or camping.

Wow - fabulous recipe! I never really marinated veggies before, but I thought I'd give this a try and I'm glad I did. This was very easy and it gave this already vibrant dish a nice herbed flavor. I used olive oil and fresh garlic vs. garlic powder. I added some red and green peppers, red onion, and cherry tomatoes. I put all the cut up veggies into a ziploc bag along with the marinade, tossed everything to coat and let it go for a couple of hours. I skewered the veggies and basted with the leftover marinade. Very simple and very tasty!

This recipe was awesome. I loved the flavor of the marinade. My family could not get enough. The only thing I did different is not using the mushrooms (I have a picky eater in my family). Other than that, I followed the recipe exactly and it turned out very tasty. Thank you for a great recipe.
