INGREDIENTS
1 egg
1/4 cup dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound ground beef
2 cups frozen stir fry vegetable blend
1 medium onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
1/4 cup soy sauce
1/4 teaspoon garlic powder
Hot cooked rice

DIRECTIONS
In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. In a large nonstick skillet, cook meatballs, vegetables and onion until meatballs are browned; drain. Stir in the soup, soy sauce and garlic powder. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until the meat is no longer pink, stirring occasionally. Serve over rice.
FOOTNOTE
Be creative when making Veggie Meatball Medley. Use a variety of frozen mixed vegetables your family favors. Or replace the mushroom soup with cream of broccoli, celery or onion.

We really enjoyed this. I used some fresh broccoli and fresh garlic along with frozen beans/carrots medley. I found that it was easier to fry the meatballs, then drain, then fry the veggies, add the soup and then simmer the meatballs. I had to use 2 cans of soup and a little extra soya but I must say that the sauce was really yummy. Not at all like the usual mushroom soup sauce but more like a really rich gravy. My husband thought it would have been better with steak and I don't disagree (hence the 4 stars) but the meatballs were good too. I'll make this again for sure with steak.

Very good. I did have to change a few things only because I did not have them in my house. I did not have soy sauce, so I used milk and a little au jus. I cant wait to be able to try it with the soy sauce. Even my picky children loved it. Thanks!

My whole family loved this. The only change I made was I doubled the recipe but only used 1 can of soup (instead of 2) & about 1/2 can of milk. I did this because we don't like things too salty and I didn't have any Healthy Request soup w/ lower sodium. I also used lower sodium soy sauce which is what I always use. My little boys helped to shape the meatballs so they loved the meal even more since they "helped". I will definitely make this again!
