Great burgers. Cooked carrots, squash and zucchini are stirred into oats, cheese, and egg with some broth and soy sauce added for color and taste. Chill for at least 1 hour, then shape into thick patties and broil.

A favourite at our house - a yummy rich goulash minus the meat. You can substitute the Quorn™ for tofu that's been shallow fried or sliced mushrooms. Hope you enjoy! Serve with rice, noodles, or potatoes.

You can serve these pancakes for breakfast or dinner! Biscuit mix is combined with yogurt, eggs, onion and bell peppers. A garnish of parsley and diced tomatoes completes the dish.

Rice, lentils, onions and mushrooms are combined with savory herbs and baked into a vegetarian version of an all time favorite. Substitute the egg with an egg replacer for a vegan version of the dish.

One of the classic meat and potatoes meals. A great British dish my grandmother made for us on those cold and stormy days.

Use soy. No, use beans. No, use oats. No, use rice. Hey, why not use them all? This veggie burger is an alternative to eating its beefy cousin. It's high in fiber and as a stand alone patty, actually tastes pretty good. Once you layer the ketchup, mustard, pickles, etc. you won't be able to tell the difference.

Veggie Fajitas

My family loves these peppery veggie fajitas! Serve the fajitas with flour tortillas, cheddar cheese, lettuce, tomatoes, sour cream, and I even put steamed broccoli on the side (so each can add broccoli if wanted).

Stir-frying is very quick, and helps retain the flavor of the vegetables. This is a recipe all vegetarians have to try! Fluffy white rice is the perfect complement to this dish.
