This is a Pad Thai recipe I got from a restaurant. The sauce is made with ketchup, fish sauce, sugar, lemon juice and vinegar, and it's sprinkled liberally with bean sprouts and chopped peanuts.

This dish can be made with shrimp, chicken or pork instead of tofu. Look for the more exotic items in the Asian foods section at your local grocery store. Adjust the pad Thai sauce ingredients to taste.

If you've never had this wonderful dish, then it 's time. Take out your wok and try this recipe at home. Wonderful cellophane noodles form the base of this dish, but are augmented with tofu, peanuts, bean sprouts, egg and other tasty ingredients.

Why eat out when the best traditional Pad Thai is made right in your own kitchen? This is the best Pad Thai recipe ever. My father's Pad Thai is better than most Thai restaurants! I like it because of all the fresh ingredients, it is not greasy. It's satisfying and healthy. There is no meat in this recipe.

Udon noodles are cooked and combined with cucumbers, sprouts, green onions, carrot and lots of freshly chopped mint. Then everything is tossed with a spicy ginger/peanut sauce and garnished with roasted peanuts. Makes six generous servings.

The wonderful national noodle dish of Thailand, it is now served in many trendy restaurants. It can be adjusted to your taste, add ingredients that you like and make it as spicy or tart as you want to. It is also great as a basis for a stir fry of leftovers. This is a recipe for those who like it HOT, if you can't handle the heat, go easy on the chile sauce.
