This was very good but it didn't blow me away. The vinegar on the veggies is a very nice touch. Mine came out a bit too sweet for my tastes but nobody else thought it was sweet, but I'm sensitive to sugar and I think it may have been because I used a vidalia onion combined with the sweetness of the apple cider vinegar I used, next time I would use a regular white onion. I also added fresh crushed garlic which I think is a must!

I can't have dairy so I made this instead of pizza and my son loved it. He didn't missed the sauce or cheese.

I used this recipe for the topping only didn't have the mushrooms but added all the rest, added trace amount of parm. and mozzarella cheese as well as fresh rosemary. it was wonderful!

Delicious! We actually added a small amount of pizza sauce and cheese and topped it with pepperoni. We also tried the recipe as-is and the vegetables taste so delicious when marinated in the vinegar and spices mixture. So yummy both ways!
