SUBMITTED BY:
Edith MacBeath
"Vanilla Wafer Cookies are chewy and irresistible, comments Edith MacBeath of Gaines, Pennsylvania. They're a wonderful way to round out a penny-pinching menu."

this is absolutely one of the best drop sugar cookies I've ever made. I made this 9 years ago from the Taste of Home magazine for my then fiance. He adored them and keeps asking me to make them for him. I'm so glad I found the exact recipe for him again. I send them on deployments with him because they travel well in a sealed container. If you're looking for a delicious vanilla cookie, this is definitely one you could do. Variations: you can dip half in chocolate, or use some crushed nuts like lightly toasted pecans pressed into the top. Gives very rich flavor. Great for Christmas cookies.

These were a huge hit! I did feel like the sugar was a bit much, so I cut down to 3/4 cup. I also divided the dough in half (without adding vanilla just yet), and mixed half the amnt of vanilla into one half, and about 1/2 tsp almond extract into the other half. They were both so delicious! Everyone loved them. They were nice and chewy and perfect. Even though I cut down on the sugar though, my mom still said they were a bit too sweet! Great recipe though, thanks!

We used 3/4 Cup sugar, also tried dropping the cookies but they were puffy, unlike "Nilla Wafer" cookies so we rolled about a level teaspoon-full in the palm & then softly flattened. They turned out Excellent! If you like crispy edges, slightly chewey centers, and the taste of sweet, crispy butter --these are a dieter's nightmare on the hips but fantasy on the lips. My husband's a cookie-hater (chocolate-chip is the only one he'll even bother with) and he took a cereal bowl FULL of these from the cooling racks & a mug of milk & went off dunking & munching. ***!!!BEWARE!!!***

Really good coffee cookie. I changed the vanilla extract to almond. Somewhat thin with crispy outside and chewy inside. If you want the whole cookie chewy then take out before the sides turn light brown. Very good.

These were SO yummy. Not as hard as the kind you would get in the box at the stores, so that was a little different. But, you can always cook a little longer to make a little harder. I used these for the Banana Pudding IV on this site and cooked them a little longer so they'd be crispier for the topping. Will make again. Thanks! :)
