'The recipe for this delicious spice cake originally called for cooking and mashing a pumpkin and making the cake from scratch,' writes Laurine Lockwood of McGregor, Minnesota. 'With my large family, I don't have time for all of that. I much prefer this easy version!'

Whenever I went to Grandmother's, she served these flavorful bars, topped with creamy frosting. Today, I do the same for our grandchildren, who like the little treats just as much.

This recipe is an old-time favorite that was given to me by my mother-in-law. She told me the cake shouldn't be eaten the day it's baked...aging makes it so much better. She once entered this cake in a contest and won first prize!

My grandmother developed this cake during World War I when eggs were in short supply, as well as being very expensive if you could find them. This is not a sweet cake, and it is great for people who cannot eat eggs. It is also inexpensive to make. As an added bonus, you can change the cake's taste a little by frosting it or pouring pudding over it.

This cake gets better the longer it sits, so I try to make it a day ahead. My mother-in-law introduced this deliciously rich cake to me. With its creamy frosting and light almond flavor, no one can stop at just one piece!

An elegant three layer cake that is moist and spicy and frosted with a delicious cream cheese frosting. This is a family favorite at Christmas in our household! I cut red and green candied cherries in half and decorate the top in a wreath pattern.

'I held this velvety, rich cake on my lap during the 4-1/2 hour drive to the Greatest Cocoa Cake Contest at the Pennsylvania Farm Show last January,' recalls Sandy Johnson, who lives on a dairy farm near Tioga. 'By the time we got to the judges table, I was almost too tired to care if I won.' But win she did! Topping 59 other entries, Sandy's impressive layer cake with creamy frosting took first place!
