Chock full of pecans and currants and spiked with a generous helping of bourbon, this cake is perfect for a special dinner. Great served with ice cream! 

Pecan Cups

These miniature pies are made in muffin tins. First, a lovely cream cheese pastry is patted into the bottom of each paper muffin cup. Then filling is whipped up with brown sugar, butter, an egg, and chopped pecans, and dropped by spoonfuls into each muffin cup. Bake and top each mini pie with a dollop of whipped cream.

Bertha's Big Bourbon Bundt Cake

This recipe came to me via a friend, Bertha, who just loved any cake that had booze in it. I have, in the past, eliminated the bourbon when making this for kids and it is still wonderful. Basically, it is a variation on a tunnel of fudge cake.

This unusual cake is flavored with red wine, chocolate chips and powdered cocoa, and is spread with the frosting of your choice. Note: the more cocoa you add to the mix, the deeper the flavor of the cake. 

Kentucky Bourbon Cake

Fruit cake soaked in whiskey. Should be made a month in advance, if you can wait that long (I can't!). You'll need some cheesecloth for giving this cake its trademark bourbon wrap.
