I was doing a trial run for this year's Thanksgiving and saw this recipe. I loved the idea. I just changed a few things. While the potatoes were baking (w/o the oil but in foil - I didn't want the fire department to make a call) I took the same amount of unsalted butter and sauted finely chopped, peeled apple and cinnamon until the apples were soft but not falling apart; Cooled the apples & butter and followed the recipe as suggested. I switched out the walnuts for pecans as I did not have walnuts on hand. Because I had the apple in the sweet potatoe mixture I sprinkled chopped pecans on top! Beautiful presentation but very rich and filling. I think it will be a hit with the vegetarians at my table! Happy Thanksgiving!

This is so good and easy! I did not use the oil and made the potatoes in the microwave. I did add a few marshmallows to the top which gave it a nice garnish. Will make them again for sure!!!

fantastic - I made them into mashed potatoes instead because I wasn't up for wrestling with the skins. You can bake or boil the potatoes if you do it this way. I added a little bit of milk like you would with regular potatoes but it probably didn't need it. I didn't mix in walnut only because I didn't have any though they would have been great. I'll definitely make them again!

Very Very Good. I mixed it with a blender before putting the walnuts in. The only thing I would change is no oil and crank up the heat to 375. The skin was way to soft even with using a small amount of oil

This sounded like a good idea, but made according to the recipe there is WAY too much cream cheese. It totally covers the sweet potato taste. We each took two bites max. Maybe 1/3 of the cream cheese would be good, but I probably won't bother to find out. I'll go back to my Williamsburg casserole with marshmallows that the whole family likes.

3.5 stars, really. I ended up serving in a casserole dish because the skins were too soft to put the filling in and bake again. Overall, flavors were all great together and it was a nice side dish for our Easter ham dinner.

I baked the potatoes and then scooped them out and just put all the ingredients into a 2 qt square casserole dish. This was really rich, and I think I prefer a sweet potato casserole with a sugary crust on top. It was still pretty yummy though.

My husband and I repeatedly prepare this dish every time we have a gathering and it's always a hit!! We love it.... The only change we made is we add marshmallow on top and it's even better..

This is basically cream cheese frosting mixed with sweet potatoes... it was REALLY rich. Too rich for my family. It tastes more like a pie than a dinner side. And the taste is ok, but it's not that great. It masks the taste of the sweet potato, which is unfortunate. I wouldn't recommend this recipe.

SO good! I didn't add any oil and put quite a bunch of brown sugar in them. Delectable. Thank you for this recipe, I will be using it again! Although not everyone has quite as much of a sweet tooth as I do, so I'll have to add less sugar. :)

Yum! My whole family loved this one. My grown son says, "This is a keeper!" He insists I save the recipe for him. I don't think I changed up the recipe much except I used less brown sugar and vanilla. I didn't add any cinnamon because I feel it covers up the flavor of the potato too much.

I loved these!! I made them with my Christmas Eve dinner. I had a hard time putting the mixture back into the skin but I think that was because of the way I had cut them off. I did add a little cinnamon to the mixture. Loved it! Thanks for sharing!
