5 (5 ounce) baking potatoes
4 ounces Neufchatel cheese, softened
2 tablespoons milk

1 (1 ounce) package ranch salad dressing mix
1/2 cup shredded reduced-fat Cheddar cheese

Directions

Scrub and dry potatoes, then prick several times with a fork and place on a microwave-safe plate. Heat in microwave on high until tender, 18 to 20 minutes; remove and allow to cool for 10 minutes.
Combine Neufchatel cheese and milk in a small bowl; beat in salad dressing mix.
Cut potatoes in half lengthwise; remove pulp, leaving a thin potato skin shell. Mix pulp into cheese mixture and mash. Spoon mixture into potato shells; sprinkle with Cheddar cheese.
Place two potatoes on a microwave-safe plate. Heat in microwave on high until heated through and cheese is melted, 3 1/2 to 4 1/2 minutes.

I liked the filling on these, but it is pretty salty. I kind of expected that though, I guess, with the packaged ranch mix. The main problem, is the texture of the potato skin just doesn't get crispy like in the oven. Maybe oiling the skins would help. Doing that and finishing off under the broiler, would have probably been best.

I love these potatoes. It brings potatoes to a whole new level of awesome. They are creamy and amazing just watch how much of the ranch seasoning you put in because it can get a little strong.

I made these as instructed, cooking the potatoes in the microwave - stuffed them and sprayed the potato skin with cooking spray. I then re-heated them on the top rack of the grill while I was grilling the meat for dinner. Very tasty and easy for a fast meal.
