This is definitely the best twice-baked potato receipe that I have came across. If you don't like hot/spicy foods, I would suggest that you use less red pepper. Also, I omit the bread crumb topping as I don't like the texture.

One word........WOW!! These were awesome!! I didn't have any chives on hand but they were still awesome...I also cut the red pepper in half & they still had a "kick" to them. In my hubby's words.."EXCELLENT!!" Thanks so much for a keeper recipe!

Twice baked potatoes are one of my favorite ways to fix potatoes. This recipe was REALLY good... The only thing I would change would be to make more of the filling. I think my potatoes were a little larger than most and it left the filling a little dry. Even so, the potatoes were great!

I LIKED THESE POTATOES. I WAS SHORT ON TIME SO I MICROWAVED THEM, THEN BAKED THEM FOR FIFTEEN MINUTES. I DID NOT HAVE SOUR CREAM SO I USED RANCH DRESSING INSTEAD. TASTY.

Very good, but I kinda overcooked the potatoes so they were a bit dry - but the filling was awesome...was thinking - maybe trying cream cheese instead of sour cream? Might be tasty.

This recipe was great! I used 7 small potatoes instead of 4 big ones only because thats what I had on hand. I also used a taco cheese blend instead of just chedder. If you like a little spice this recipe is perfect.

Great crowd pleaser. A little time consuming but easy. I left out the bread crumbs and red peppers. I also added some bacon into the mixture, not just sprinkled on top and added extra butter into the mixture, which melted great into the potato skin "boat" and made it more moist and flavorful. Endless compliments!!

These are delicious!! Sometimes I skip the mushrooms or chives if I don't have them on hand and they still turn out yummy but they are really good to add. Follow the recipe exactly. Excellent!

Searched several sites for this recipe, found this one, made it and loved it, did tweak it like I do all my cooking, but was still great, and, BTW All4ply2, saw that "adjustment" on the Foodnetwork site, for the salt and prescoring the potato, didn't find that hint useful

Loveed these potaoes.The whole family loved..On the same sheet you have potatoes but 1/4inch. thick layer on rock salt and outline tops on potaoes you will find potaoes cook better and tops come off easier!!!

Great as a main dish for lunch too. I made it the night before and brought to work for lunch (witha little less sourcream than called for. Reheated it and brought a side of sour cream.

I am giving these a 3 because my fiance said they weren't bad. I couldn't bring myself to eat one. They looked pretty gross to me. Potato mixture seemed very dry. Maybe adding some milk would help. Don't think I'll make these again. Sorry. :(

AWESOME!!!! The pepper was just right! (My wife and kids who are slightly wimpy did not agree.) I think maybe half the black pepper for the less adventureous. Seriously: cheese, bacon, red pepper, sour cream and potato... how could this go wrong? Make this for dinner TONIGHT!!!
