1 1/4 cups
chocolate graham cracker crumbs
1 (9 ounce) package
Werther's® Original Caramels, divided
Karo® Light Corn Syrup
2 (8 ounce) packages
cream cheese, softened
Spice Islands® Pure Vanilla Extract
semi-sweet chocolate chips
Mazola® Corn Oil
cream OR milk
finely chopped pecans
We spent all that time in energy into this just for the caramel to be so hard on top that we couldn't cut a nice piece from it. Frustrating! Also, we used an oreo crust instead. Next time I will prebake the crust! The cream cheese / caramel part turned out fine. We didn't have chocolate chips and used some oreo crumbs. I will not use the Werther's caramel on top next time and will opt for some caramel sundae topping on it instead. This was the second time that I've baked with the Werthers and they were great in my homemade apple pie, but they were a poor choice for the top of this cheesecake; the consistency was all wrong.
Awesome!!! I will definitely make this again. I cooled my caramel mix a longer than 5 min though. Other than that, didn't change one thing. Delicious!!
I liked this cheesecake. It wasn't difficult to make and it was satisfying. I really am thinking of substituting milk chocolate next time.
It's a little tricky to assemble but I think mine turned out pretty (see photo) and we loved it. If you can't make this group of ingredients taste great, you're an idiot. My incorporated caramel was still too hot after 5 minutes but that's hard to gauge, let it cool longer. And the chocolate and caramel drizzles could have been a little runnier, they tended to drop in clumps first then drizzle. Next time, I'll put them in a zip-lock and squeeze them through a clipped corner. I used a graham cracker crust 'cuz that's what I had on hand. That's the only change I made except I didn't use any of the recommended brands and I skipped step 7. By the way, 4 cubes of caramels make an ounce. This recipe takes 36 pieces, if you're working with a different size bag.
