"ALTHOUGH my grandmother lived in the city, she always tended a large vegetable garden. Toward the end of summer, we helped her pick the vegetables for our favorite dishes. 1 1/2 pounds turnips, peeled and sliced
1 1/2 teaspoons salt, divided
1/2 teaspoon sugar
1/2 cup butter or margarine
2 tablespoons all-purpose flour
2/3 cup milk
4 eggs, separated
3 bacon strips, cooked and crumbled

DIRECTIONS
Place turnips, 1/2 teaspoon of salt and sugar in a saucepan; cover with water. Cover and cook until turnips are tender, about 15-20 minutes; drain well and mash (do not add milk or butter). Set aside.
In another saucepan, melt butter; stir in the flour and remaining salt until smooth. Add milk; bring to a boil. Cook and stir for 2 minutes. Beat egg yolks in a small bowl; gradually stir in 1/2 cup hot milk mixture. Return all to pan; cook and stir for 1 minute. Stir in turnips; remove from the heat. Beat egg whites until stiff peaks form; fold into batter. Spoon into a greased 11-in. x 7-in. x 2-in. glass baking dish. Sprinkle with bacon. Bake, uncovered, at 350 degrees F for 30 minutes or until golden brown.

My friend makes this every Christmas and eveyone just loves it! Light, fluffy, tasty ... a terrific way to turn a sometimes unpopular vegetable into a surpisingly tasty treat!

Wow, Really tasty! A Hit! I used fresh neighbor grown turnips. I followed the recipe except substituted EVOO for half the butter and used a bit of wild sausage on top instead of bacon. I'll definitely make it again!

This was a big hit. Even my kids loved it. Very light and tasty. I used freshly picked turnips, and in addition to following all of the steps in this recipe, I boiled the greens for about 15-20 minutes, drained them well, cut them up and stirred in a bit of bacon grease, and then when the soufflé came out of the over, I topped it with the turnip greens. Delicious.

I thought this recipe was great! Good flavor. Nice dish to introduce to some one who's never tried tunip greens. I did add more crisp, crumbled bacon. Yummmm!

Everyone at the Potluck enjoyed this recipe, they couldn't believe it was turnips. Personally it seemed more like something I would want for breakfast.

The best thing about this recipe is that it allowed me to prepare the turnips I received from the CSA in a manner that my family would eat them. That does count for a lot, so I'm glad I found this recipe. On the other hand, both my girls made the comment that the dish didn't taste like anything. My husband even confessed that it was needing some salt and pepper. As a vegetarian, I did not eat it, so I cannot honestly say anything firsthand on the flavor. The biggest downfall for me was that it required a lot of work to prepare a side dish that didn't get the fanfare. As I mentioned, they did eat it, just not with rave reviews, and with all the effort that went into it I was hoping for a better turnout. If I make this again, I will add some shredded cheese and maybe use additional spices to jazz it up a bit.
