Turnaround Turkey and Rice

INGREDIENTS

  • 2 tablespoons butter
  • 2 stalks celery, chopped
  • 1 small onion, chopped
  • 1 cup cooked turkey, cut in cubes
  • 1 1/2 cups water
  • 1 (.87 ounce) package McCormick® Turkey Gravy Mix
  • 1/4 cup milk
  • 2 tablespoons flour
  • 1 teaspoon McCormick® Season-All® Seasoned Salt

DIRECTIONS

  1. In a saucepan, melt butter over medium heat. Add celery and onion and cook for 5 minutes or until tender, stirring occasionally. Add cooked turkey.
  2. Blend water, Gravy Mix, milk, flour and Season-All; pour over turkey mixture. Stir. Bring to a boil. Reduce heat and simmer 5 minutes. Serve over rice.

I was a skeptic but with several pounds of leftover turkey, I was willing to try this recipe. It was quick and tasty. Heating the turkey in the onion/butter mix was just the ticket to removing that "day old" refrigerated taste I find turkey gets. I also added parsley to add some colour as another reviewer suggested. Finally, I didn't have turkey gravy so I used a tin of Campbell's chicken broth and omitted the water called for. It turned out creamy and good!

I hate to say this because it may scare away some perspective users but this was a classic cafeteria meal to me and I LOVED IT! It was a gooey turkey and gravy stew that tasted great over white rice. Nothing fancy but great comfort food.
