INGREDIENTS
1 (3 pound) boneless turkey breast, halved
2 tablespoons butter or margarine, melted
2 tablespoons dried parsley flakes
1/2 teaspoon dried tarragon
1/2 teaspoon salt (optional)
1/8 teaspoon pepper
1 (4.5 ounce) jar sliced mushrooms, drained
1/2 cup white wine or chicken broth
2 tablespoons cornstarch
1/4 cup cold water

DIRECTIONS
Place the turkey, skin side up, in a slow cooker. Brush with butter. Sprinkle with parsley, tarragon, salt if desired and pepper. Top with mushrooms. Pour wine or broth over all.
Cover and cook on low for 7-8 hours.
Remove turkey and keep warm. Skim fat from cooking juices.
In a saucepan, combine cornstarch and water until smooth. Gradually add cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the turkey.

Nutritional Analysis: One serving (prepared with reduced-fat margarine, fresh mushrooms and low-sodium broth and without salt) equals 181 calories, 76 mg sodium, 60 mg cholesterol, 2 gm carbohydrate, 24 gm protein, 8 gm fat, trace fiber. Diabetic Exchanges: 3 lean meat, 1/2 vegetable. 12 servings.

Great recipe! I will be making again and again. I used 4 skinless, boneless turkey breast halves and used chicken broth instead of wine. I also seasoned the turkey and browned it in melted butter before adding to the slow cooker with the remaining ingredients. Super easy and tasty recipe.

Loved this. I followed recipe exactly and used white wine. My guests enjoyed it as well. Great as is "homey" recipe.

This was very good and light. I didnt have turkey so I used chicken breast, it was fork tender, very moist and tastey. My husband isnt one for anything mildly spicy so this was perfect for him, I added a little more seasoning to mine after it was plated. Thanks!!

This is really good for a slow cooker recipe. Often with slow cooker food, meat (or poultry etc.) can come out tasting boiled. This actually had a crisp to it! I used sherry and fresh sliced portabella. The gravy was dark and rich. The ease and taste make this a worth while recipe.

I had a really hard time deciding between 3 & 4 stars. I enjoyed this but didn't LOVE it. The meat was tender and good, just a little boring. However, I decided on 4 stars since I will make it again, I will probably also add fresh portabello mushrooms and more seasonings too...

It was a decent recipe to use left over turkey on but to be honest I doubt I will ever make this again. It wasn't our cup of tea but looks like it is definettly to other people.
