Turkey Loaf

INGREDIENTS

  • 1 1/2 pounds ground turkey
  • 1 egg, lightly beaten
  • 1 onion, chopped
  • 1 1/2 cups bread crumbs, or as needed
  • 2 teaspoons salt
  • ground black pepper to taste
  • 1 tablespoon poultry seasoning

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix the turkey, egg, onion, and bread crumbs. Adjust the amount of bread crumbs as needed to make a stiff mixture. Season with salt and pepper. Transfer the mixture to a 9x5 inch loaf pan, and sprinkle with poultry seasoning.
  3. Bake 1 1/2 hour in the preheated oven, or until meat is cooked through and the internal temperature is at least 170 degrees F (70 degrees C) when taken with a meat thermometer.

Note

For a variation, prepare one (6 ounce) package of stuffing mix as per package directions. Roll out the turkey mixture, and top with the prepared stuffing. Roll jelly roll style, and place in loaf pan. Bake as above.

My fiance loved it! He said it tasted like regular meatloaf but was excited that it was a bit healthier with the turkey. I added some rosemary, thyme and parsley for extra flavor. Served with mashed potatoes and carrots. ***Update...I have made this two more times and it is a major hit every time! Try it!

Ground Turkey comes prepacked in 1 lb packs, so I used 2 lbs to make this. To make it even healthier I used oatmeal in place of the breadcrumbs. It was very good and made enough for 6 servings. Although I will continue to try new ground turkey recipes out of interest, I will most likely use this one again.

I personally love this recipe, while my bf thinks it's "pretty good". I think that he prefers the standard ground beef meatloaf, but we both like the health benefits of using Turkey. On my first attempt, I followed the directions as is. On my second try I rolled it with a layer of mashed sweet potatoes and a thin layer of cranberry sauce. Great recipe, definitely a keeper!
