Turkey Jerky

1 pound turkey breast slices
3 tablespoons Kikkoman Lite Soy Sauce
1 teaspoon fresh lemon juice
1/2 teaspoon garlic powder
1/4 teaspoon pepper

DIRECTIONS
Cut turkey breast slices lengthwise into long, 1/4-inch wide strips; place in large bowl. Combine lite soy sauce, lemon juice, garlic powder and pepper. Pour over turkey strips; toss gently to coat well. Arrange strips, in single layer, being careful not to overlap, on 1 or 2 wire racks placed on large foil-lined baking sheet.
Bake in 150 to 175 degrees F oven 4 hours, or until dry. Loosen jerky while still warm; cool thoroughly on racks. Store in refrigerator in air tight container or plastic bag.

This tasted pretty good. Next time I make this I will make the following changes. First, Ill slice the turkey meat when it is partially frozen. It will be easier to get uniform long strips. Next, Ill marinate the turkey in the seasonings longer. I marinated it for a couple of hours and it didnt seem to pick up enough flavor for me. I might try adding a dash of liquid smoke or something to this. Lastly, Ill spray the racks with cooking spray first. I dont know how well this will work after it has been in the over for four hours, but Ill give it a try. I cooked mine for 4 hours at 170. Ill try this again sometime

TWO days ago my daughter called and asked me to make her some "jerky". Not having any recipes for this, I've been scrambling. Well, today, here it is and with turkey; not the usual beef. Well, AllRecipes, you've done it again. Many thanks!
