chopped red bell pepper
2 (14.5 ounce) cans
Del Monte® Chili Style Diced Tomatoes, undrained
1 (14.5 ounce) can
Del Monte® Cut Green Beans, drained
Cheesy Corn Fritters:
1 (8.5 ounce) package
corn muffin mix
large egg, beaten
1 (8.75 ounce) can
Del Monte® Whole Kernel Corn, drained
shredded Monterey jack cheese with jalapeno peppers
This recipe is fantastic! I don't really like tomatoes but this recipe makes them easy to devour! I added corn for a little more color and am adding this to my favorites! The corn fritters are excellent as well but hard to get just right, but by the last batch they were coming out perfect I would recommend turning the heat down to low-med instead of medium as the burn quickly if you don't flip in time
Delicious and healthy the pot was empty when I took to a family party tonight! Added celery, jalapeno pepper, and other spices including chili powder.
The fritters were much too runny to fry though. Added more cornmeal and sharp cheddar cheese. Scooped out with melon baller and added a piece of pepper jack cheese stick in middle of each scoop. Nice improvement!
