Awesome pancakes! I was expecting them to be kind of dense like diner pancakes, but they were light & delicious. And they had such a fantastic flavor! I made them for a large family breakfast and everyone was raving about them. On a side note, this recipe makes a TON! I had enough pancakes for 4 adults and 3 kids (and some of us pigged out!), and I still had about 12 or so pancakes left over to freeze for quick weekday breakfasts. I will definitely be making them again!

Love these pancakes!!! It definitely makes enough for a truck stop. I only have two men (DH and son) to cook for so I scaled the recipe to 8 servings and ended up with 8 cups of batter. To use the leftovers, I spread them with butter, sprinkled with cinnamon sugar and rolled up for snacks. Very good warm or cold. Prefer buttermilk to the milk/lemon juice substitution. Best pancakes we ever had!

These are wonderful pancakes! It makes a big batch and I froze half and can't wait to thaw this weekend and use again. My son really enjoyed the texture and flavor of these too. Thanks!!

The BEST pancakes I have ever made! I long for diner pancakes, and have never yet found a recipe or pre-made mix which gives me what I crave! I, also, was lacking buttermilk, so used lemon juice and milk instead. I added a bit of vanilla as well and they were great. It was a little trying to scale it down for 2, but I managed in the end! GREAT RECIPE!

With this recipe, you could never failled! I used less fat milk and lemon instead of buttermilk and add also a tablespoon of flour. They were fluffy and delicious like always.

This is my standard. I've cut it down to 3 servings and memorized everything at one of each -- one egg, one c. flour, etc. My kids ask for these weekly -- just perfect!

These were great....I did cut recipe to a third and it still made about 20 pancakes!!! Now I have three kids and a brother-in-law visiting and we still have 6 leftover.My two and four year olds ate 4 a piece!I followed the recipe to a "T"-without adding the optional salt.

I cut this down to 6 servings because although my boys can eat, they really can't eat THAT much. My boys ate every bit, I only got ONE pancake! I served this with the leftover glazed kielbasa, onions and apples with Absolute Best Pancake Syrup. Next time I'll make the whole batch and freeze the rest in batches to warm in the toaster for busy mornings. NOTE: I took a tip I got from Taste of Home years ago and when adding a half of an egg, measured the egg and then added half of whatever the measurement was. Also, as I learned years ago, I wisk the dry ingredients together, then add the combined wet and mix until just moistened. It makes for a fluffy pancake that's in no way tough.

Excellent pancakes. I subbed spelt flour for about 1/4 of the flour and added some malt powder and plent of vanilla. The entire family loved them. They are so light and fluffy.

I have been playing around with pancakes for sometime now. My only complaint about this recipe is adjusting it is a little tricky. Make sure you always use REAL buttermilk, and not milk with an acid added. Other then that it is by far and away the best freaking pancake.
