yummy! very nicely textured and light, I got 12 normal sized muffins with these measurements. I used half white and half brown sugar and 16 oz. finely chopped fresh pineapple. I didn't mix the coconut in to the batter but put it on top with the sliced almonds; it got nice and toasty in the oven. I also added some raw sugar on top which I think gave them a nice rustic look. next time I will not use the almond extract, I think its too overwhelming of a flavor for me in this delicate muffin. I will consider adding some lime zest and juice, macadamia nuts instead of almonds and either coconut or rum extract. fun summery muffin! thanks for sharing your recipe!
