Tropical Fish Fillets

INGREDIENTS
4 (6 ounce) fillets orange roughy or red snapper
3 tablespoons all-purpose flour
1 tablespoon butter or stick margarine
1/2 cup reduced-sodium chicken broth
2 tablespoons lime juice
1 tablespoon minced fresh cilantro
1 teaspoon grated lime peel
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin

DIRECTIONS
Coat fish fillet with flour. In a large nonstick skillet, melt butter. Add fillets; cook over medium-high heat for 3 minutes on each side or until fish flakes easily with a fork. Remove and keep warm. In the same skillet, add the remaining ingredients; cook for 2-3 minutes or until heated through, stirring constantly. Serve over fillets.

Nutritional Analysis: One serving (1 fillet with 2 tablespoons sauce) equals 170 calories, 4 g fat (2 g saturated fat), 42 mg cholesterol, 215 mg sodium, 6 g carbohydrate, trace fiber, 26 g protein. Diabetic Exchanges: 4 very lean meat, 1/2 starch.

Very easy and flavorful! Be sure to make extra sauce to pour over fresh steamed vegetables.

This turned out ok. My parents and boyfriend liked the fish, but I thought the mess outweighed the flavor. The sauce was very good though. Next time I'll try making the sauce first, then putting the fish and sauce into a baking bag and baking it in the oven instead of frying it. Also, I used a combination of pollock and cod instead of the orange roughy for sustainability reasons

Absolutely delicious! I've made this several times with Orange Roughy and Tilapia exactly according to the recipe. The sauce is great over veggies or rice also.
