INGREDIENTS
1 cup sugar
1/2 cup vegetable oil
2 eggs
1 cup sour cream
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 (8 ounce) can crushed pineapple, drained
TOPPING:
1/2 cup flaked coconut
3 tablespoons sugar
1/2 teaspoon ground cinnamon

DIRECTIONS
In a mixing bowl, blend the sugar and oil. Add eggs, one at a time, beating well after each addition. Beat in sour cream. Combine the flour, baking powder and salt; add to the sour cream mixture. Stir in pineapple.
Transfer to a greased 9-in. square baking dish. Combine the topping ingredients; sprinkle over batter. Bake at 350 degrees F for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

THIS DESERVES A 10 STAR RATING: 22 November 2007 -- I made this for Thanksgiving morning today and as soon as I took my first bite I said, 'I THINK THIS IS THE BEST COFFEE CAKE I'VE EVER HAD!' My adult son, who had previously stated that he wants to start accumulating recipes of all the great dishes I've made in past years, said after taking his first bite, 'This goes in The Book for sure!!' I changed NOTHING in this recipe which is so very simple to make, but if I were to do so I think it would be to simply add some chopped Macadamia nuts to the topping or the cake mix itself. We were surprised at just how light the cake itself is and it's as good later when it has cooled off as it IS hot right out of the oven. If you're reading my review just know that **YOU CAN'T GO WRONG WITH THIS COFFEE CAKE!** Everyone will remember how YUMMY it was!! Ciao...Poni (rhymes with Bonnie)

Good, light and moist... the only thing wrong was the topping. The coconut came out dry and overdone. If I do this cake again, I will add melted butter to the coconut mixture and broil the topping for the last 5 minutes or so, until brown.

I made this for a potluck at work a few weeks ago and it was a hit! One of my coworkers told me the next day that she would buy the ingredients that I needed to make it again. And she did a few days later.

The best thing about this coffee cake is that it is not too overly sweet. I followed the recipe except where it called for sugar, I used half white sugar and half brown sugar. This would make a good dessert also.
