I've made this recipe ever since we moved to California, and I've adapted it to include ingredients that are readily available here. Our two teenagers think this dish is terrific, and I've made it numerous times for special occasions.

Tropical Chicken Salad

The choice of fruits for this delicious salad are wonderful - mango, pineapple, and mandarin orange. The mayonnaise/sour cream dressing has a splash of coconut extract which goes perfectly with the chicken, the fruit, and the tropical theme. Makes six servings.

Chicken and bananas go for a dip in sweetened milk and coconut with a splash of lemon. They bake side by side in a corn flake crust for a luscious tropical treat.

Very, very easy! Chicken with soy sauce and Worcestershire. My mom used to make it so often that it won this funny title. Serve with white rice to pour the extra juice over.

This is a baked chicken breast with a great mustard taste that you can bake alone or in a casserole dish with prepared wild rice.
